sourdough crumpets

 
 

Makes 4 crumpets

Ingredients

60g wholemeal plain flour

80g water

150g sourdough starter

1 tsp baking powder

1/8 tsp salt

Spray oil

Method

  1. Place flour, water, starter, baking powder and salt into a medium mixing bowl. Whisk until combined.

  2. Spray 4 crumpet rings with oil and place on a non-stick pan over medium heat.

  3. Pour the crumpet mixture into the 4 rings. Fill them up to no more than 2/3 of the height of the rings. They will rise and you don’t want them to overflow.

  4. Cook over a low to medium heat until bubbles form on the surface and the bottoms are golden brown. Be careful not to have the heat too high - the insides need to cook gently and you’ll avoid burning the outsides.

  5. Flip the crumpets and then once the crumpets are starting to hold their shape and separate from the rings, remove the rings with some tongs. Cook on the other side briefly until also golden.

  6. Serve with your choice of toppings and enjoy!
